One way of making pancakes

CAREFUL! Before spreading the first crepe, lightly grease the griddle. Then only grease if necessary.

If you notice the griddle is overheating while in slow setting mode, check that the slow setting is correctly

adjusted.
See chapter on Adjustments.
Adjust the knob to the high flame setting and leave it to heat for about 4 minutes. Then turn to the slow
setting if you are not working immediately, or adjust the flame according to what is to be cooked.

Some practical advice

If the batter runs on the griddle or sticks to the spreader: do not grease the griddle. Simply wipe with a dry
cloth. Badly-made batter can have the same effect.
If the batter bubbles and sticks to the griddle: you have not seasoned enough, continue seasoning. Or else,
the griddle is charred, scrape and redo a seasoning operation.

If the batter bubbles: it is too thin or badly-made or the griddle may be too hot.
If the batter sticks to the griddle: lightly grease it with a little cooking oil or egg yolk and butter mixture.
If you use the same griddle for fillings as for spreading the batter, it is better to avoid certain fillings which
can cause the crepes to stick, for example sugar, chocolate, tomatoes…). Fill your crepes on the plate.
If the griddle is too greasy, wipe it over before spreading the next crepe.
Do not polish the griddles as the seasoning would not maintain a good surface
Thin pancakes will not be leathery if you work with a very hot griddle.

Using the griddle for grilling


Preparation of the griddle

The griddle for grilling has a fat collector all around it and a spout to pour off the fat. It is better to place the
griddle in such a way that the fatty juices run to the sides or to the back of the appliance. You can catch the
fatty juices in a bowl placed below the spout.

1. Heat the griddle by placing the knob on maximum for 6 minutes then turn the knob to minimum

position (burner on slow setting) for the remainder of the operation.

2. Evenly spread a layer of cooking oil over the griddle, the leave to cook for 5 minutes to obtain a

burnished griddle which is completely dry.

3. Repeat operation (2) five times. Your griddle is now ready for use.

Cooking
Turn the appliance on, knob to maximum position, for 5 minutes.
Adjust the temperature of the griddle to suit your cooking needs.
When grilling meat, oil the meat rather than the griddle to reduce smoke.
