Carving a roast turkey or chicken
Arrange the turkey or chicken on a carving board
with the legs facing right. Starting at the side facing
the carver , cut the leg fr om the body by grasping the
leg with your left hand, pulling gently while cutting
through the meat and the joint at the thigh.
Place the leg on the carving board and cut through
the joint to sever the thigh bone from the
drumstick. Slice the meat from the leg and thigh,
carving parallel to the bone.
Insert the meat fork into the breast meat to secure
the body. Sever the wing from the body by car ving
through the joint.
Start carving the breast just above the joint where
the wing was removed. Cut thin slices of white
meat, carving upward and cutting parallel to the
breast bone.
Slicing an angel food, chiffon, or sponge cake
To avoid crushing sponge-type cakes, gently guide
the electric knife through the cake, cutting slices as
thin as desired.

Découpage d’une dinde ou d’un poulet
Coucher la dinde ou le poulet sur la planche à découper,
les cuisses étendues vers la droite. Commencer par le côté
faisant face au dépeceur. Pour détacher la cuisse, saisir le
pilon de la main gauche et tirer délicatement dessus en
passant le couteau entre le corps et l’articulation de la
cuisse.
Placer la cuisse sur la planche à découper et trancher
l’articulation pour séparer le pilon de la cuisse. Trancher
la viande du pilon et de la cuisse en sens parallèle à l’os.
Piquer la fourchette dans la poitrine pour immobiliser le
corps. Couper l’aile en glissant le couteau dans la
jointure.
Commencer à découper la poitrine juste au-dessus de la
jointure de l’aile. Couper la viande blanche en tranches
minces, en montant dans le sens parallèle au bréchet.
Découpage d’un gâteau des anges, gâteau
mousseline ou gâteau de Savoie
Pour éviter d’écraser ces pâtisseries légères, guider
délicatement le couteau électrique dans le gâteau. Les
tranches auront exactement l’épaisseur que vous désirez.
